Baileys Irish Cream is a popular liqueur made from a blend of Irish whiskey and cream. Baileys was created in 1974 by the Irish company Gilbeys of Ireland, a division of International Distillers & Vintners (IDV). The product was developed as a way to market Irish dairy products and whiskey in a novel form.
The idea was conceived by David Gluckman and Hugh Seymour-Davies, who experimented with blending Irish whiskey and cream. To create a shelf-stable product, they collaborated with a team of food scientists, achieving the perfect balance between whiskey and cream.
Baileys Irish Cream was officially launched in 1974, marking it as the world’s first cream liqueur. Today, Baileys is one of the best-selling liqueurs worldwide, available in over 180 countries.
Despite being made with cream, Baileys has a long shelf life (up to 2 years unopened) due to the emulsification of the cream and alcohol.
