If you’ve tuned into #RecipeTok or sought out an easy meal idea on Instagram of late, then there’s no doubt you’ll have been served a FitWaffle recipe. A former personal trainer, Eloise Head started sharing her recipes in lockdown, as she wanted to keep up her passion for food photography. Fast forward to 2025 and her Fitwaffle channels have became a runaway success. Head boasts 5.8 million followers on TikTok and 1.8 million on Instagram.
“I wanted to post recipes that were really easy for people, because I think — especially with baking — people are put off by long ingredient lists and complicated recipes. Baking doesn’t have to be intimidating — that’s why my channels blew up,” recalls Head.
Now she’s released her fourth book Fitwaffle Easy Air Fryer: 100 of My Best Bakes, Quick Desserts and Simple Meals with a new hook: all of the meals and dessert ideas can be made in an air fryer.
We all know the air fryer has cult status among a certain faction of Londoners, though Head reckons we should all be using them. She tells us 4 things you might not know about why they’re perfect for kitchens in the capital…
They’re perfect for solo meals
If I’m making a small meal or single portion, then instead of putting it in the oven, I’ll use the air fryer instead. It’s going to be quicker, it’s going to taste just as good, or sometimes better. They’re more energy efficient, especially for a single-person-household or single person living on their own.
They’re more convenient than an oven
If you need an easy lunch like a toastie or a wrap, or even when cooking vegetables, they’ll cook so much quicker in the air fryer than in the microwave or oven.
You can bake in them
A lot of people don’t realise that you can bake a lot of small batch recipes in an air fryer. I have a chocolate chip cookie recipe that’s in the book and I use it all the time. They’re soft and chewy and really delicious. Even with a smaller air fryer, you can bake them in two batches without them burning or sticking together!
It can work as an accompaniment to your oven
Anyone could benefit from an air fryer because sometimes especially if you’re cooking a larger meal and you don’t have room in the oven, you can turn on the it on to cook something separately, that you might have to have done afterwards, otherwise. It’s great if you’re having a dinner party.
