You’re making roast potatoes wrong – three tips to promise ‘extra crispy’ spuds

There’s nothing that can surpass the satisfying crunch of a perfectly roasted potato.

This iconic side dish is essential for all roast meals, serving as a vessel for sopping up delicious gravy. However, perfecting the roastie can be quite the culinary challenge, often resulting in undercooked or excessively dry results.

But fortunately for home cooks, culinary enthusiasts are offering their expert advice. One such food lover, known as Little Spice Jar on TikTok, revealed three simple steps to game-changing roasties, requiring only two additional ingredients.

Little Spice Jar, also known as Marzia, suggested: “The first tip is to use the right potato. You want something starchy like a Russet potato, which makes them extra crispy in the oven.”

She added: “The second thing you want to do is boil your potatoes in alkaline water and we do this by simply adding baking soda to the water while the potatoes are boiling this breaks down the surface of the potatoes and gives them more nooks and crannies that brown up in the oven.”

Marzia also recommends using ghee or duck fat instead of traditional oils. They have a ‘higher smoking point’, allowing them to “cook for a longer period of time at a higher temperature without burning”.

To further enhance flavour, why not finish with a brush of garlic butter on the crisped spud? While optional, this can add a delightful twist to the humble roastie.
